Being vegan doesn’t mean that you can’t enjoy your favorite non-vegan foods; you just have to adapt the recipes to make them vegan. Take pancakes, for example: typically, pancakes have eggs, milk, and butter. But pancakes are easily made vegan, and they are just as delicious without the dairy and eggs. Here’s how you make vegan banana pancakes for one: mix 1/2 cup flour, 1 heaping teaspoon baking powder, 1/2 a ripe banana, mashed, and 1/2 cup + 2 tablespoons soy milk. Then pour the batter onto a hot pan (I used a little canola oil to make sure the pancakes didn’t stick).

These only take a minute or two to cook on each side. Flip them once they’re brown on the first side and cook on the other side until golden brown.
